THE GRAPES



CABERNET SAUVIGNON

Cabernet Sauvignon is the perfect variety of grape for extremely well-placed vineyards such as CHATEAU PERAYNE, home of truly first-class wines. It is one of the oldest varieties of red in Bordeaux, a direct descendant of the original grapes Biturica and Viduna. Cabernet Sauvignon requires a long time to reach maturity - both on the vines and in the cellar. It is usual for three years to delay the pleasure one can have in drinking the wine. What has unfortunately become common practice in the viticulture industry remains out of the question at CHATEAU PERAYNE: unlike others, they do not mistreat their grapes with physical and chemical processes in order to manufacture what is supposedly still Cabernet Sauvignon as early as one year after the grapes have been harvested. For authentic NATURE & BORDEAUX, patience is the obvious method of production, and it is well rewarded with the wonderfully classical aromas of mature berry fruits, cassis, cherries and liquorice. A magnificent, complex wine with the potential to age very well.


MERLOT

Merlot grapes mature early and thrive in moist, chalky and loamy fields, such as those which can be found at CHATEAU PERAYNE. This soil is healthy and full of micro nutrients. The vine's success is down to the large and bountiful fruit it produces. A Merlot never ceases to impress with its full-bodied impact and pleasant aftertaste; it is a wine that melts in the mouth. The classic aromas of a CHATEAU PERAYNE Merlot range from red fruits, liquorice and a light touch of smoke to cypress wood.


CABERNET FRANC

One could almost say that Cabernet Franc grapes have made a home for themselves in the vineyards of CHATEA PERAYNE. The chalky, loamy ground has a high level of fine topsoil and is in the ideal location for this demanding fruit. Cabernet Franc requires a great deal of devotion and is recognised as the most sophisticated type of grape in Bordeaux. This is just one reason why fewer and fewer people choose to grow it.

At CHATEAU PERAYNE, however, Cabernet Franc grapes constitute no less than 35% of the vineyard's output; this figure is only exceeded by Cheval Blanc in the famous area of St. Emilion. The rare enjoyment of an authentic Cabernet Franc that has been passionately cared for pleases even the fussiest of wine connoisseurs. SEMILLION

A white variety of grape with a very rich bouquet. It has a divine fullness of body and melts in the mouth. Aromas of banana, pineapple, lychee, pear or vineyard peach are not unusual and are especially noticeable in sweet wines such as the Cotes de Bordeaux St. Macaire Moelleux 2003 (The winner among connoisseurs), which offers a fine example of their combination.


SAUVIGNON

One of the best-known white grapes in the world. The pleasant bitterness of Savignon plays with one's palette in combination with the pervasive fruity freshness of this CHATEAU PERAYNE. Its character ranges from a gentle full body to spicy tang with the scent of green apples, citrus fruit, pineapple and passion fruit.
